Receipe for Corny Corn Muffins (super quick & easy)
1 box Jiffy Corn Muffin Mix (eggs & milk)
1 can Southwest or Mexi-corn
Cupcake Cups
Preheat Oven 400 degrees.
Follow instructions on box for corn muffins. Add 1 can of southwest corn with liquid to the batter. Fold mixture together. Pour into cupcake cups in the muffin pan. Place in oven until golden brown and a toothpick (or butter knife) comes out clean of center of muffin. Rub with butter and serve.
